Ederra Viura-Verdejo is made from two of the exclusive white grape varieties of Rioja . The harvest of these varieties is carried out separately, waiting for the optimal maturity of each of them, which is delivered to the Viura winery. The harvest is carried out early in the morning to ensure freshness and to minimize the time spent in the winery, with the aim of maintaining the fruit and all the advantages of these varieties. The alcoholic fermentation is carried out at 14 ºC to maintain the freshness and quality of the wine. After the first transfer of the different varieties, a recombination takes place, from which the wine is aged for 3 months before being bottled.
